1 cup (2 sticks) unsalted butter, softened 3/4 cup granulated sugar 1 large egg 1 teaspoon vanilla extract 1 teaspoon almond extract 2 1/4 cups all-purpose flour 1/4 teaspoon salt Food coloring, optional
Preheat oven to 400 degrees F (200 degrees C). Line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla extract, and almond extract.
Gradually add flour and salt, beating until just combined.
Divide dough into portions and tint with food coloring, if desired.
Fill a cookie press with desired disc and shape attachments. Fill press with dough.
Press dough onto prepared baking sheets, leaving about 1 inch between cookies.
Bake for 8-10 minutes, or until edges are golden brown.
