1 1⁄2 lbs salmon fillet, skin removed 3 garlic cloves, minced 2 tbsp fresh lemon juice 2 tbsp olive oil 1 tbsp dried parsley 1 tsp dried oregano 1/2 tsp salt 1/4 tsp black pepper
Preheat oven to 400°F. Pat the salmon dry with paper towels and place skin-side down on a baking sheet lined with parchment paper.
In a small bowl, mix together the garlic, lemon juice, olive oil, parsley, oregano, salt and pepper. Spread this mixture evenly over the salmon.
Bake for 10-12 minutes until the salmon flakes easily with a fork.
Broil for 1-2 minutes at the end if you want to brown the top a bit more.
Remove from oven and let rest for 5 minutes before serving.
