5oz mixed greens 1 cup fresh cranberries, chopped 1 pear, cored and thinly sliced 1/2 cup crumbled feta or goat cheese 1/2 cup chopped pecan pieces 1/2 cup pomegranate arils
1/3 cup whole berry cranberry sauce 1/3 cup apple cider vinegar 1/4 cup olive oil 2 tablespoons honey 1 shallot, finely minced 1 teaspoon dijon mustard 1 garlic clove, minced Salt and pepper to taste
In a blender or food processor, combine the cranberry sauce, apple cider vinegar, olive oil, honey, shallots, mustard, and garlic. Blend until smooth.
Season to taste with salt and pepper.
In a large bowl, combine the mixed greens, cranberries, pears, cheese, pecans and pomegranate arils.
Drizzle the cranberry dressing over the salad and toss gently until evenly coated.
Serve immediately and enjoy!.
