Spaghetti Squash with Marinara Sauce

Cut spaghetti squash in half and roast face down until tender. Scrape out noodle-like strands with a fork.

Toss strands in heated marinara sauce and Parmesan cheese. Garnish with basil.

Follow roasting directions above. Make baked turkey or beef meatballs.

Roast spaghetti squash, then toss strands with lemon juice, minced garlic, spinach, cherry tomatoes, Kalamata olives, crumbled feta cheese, olive oil, and seasonings.

Roast squash as directed. Toss hot strands with prepared or homemade basil pesto. Mix in toasted pine nuts, sun-dried tomatoes, and shredded Parmesan cheese.
