Creative Cottage Cheese Recipe

Off-white Section Separator

2 cups cottage cheese 3 eggs 1/4 cup all-purpose flour 2 tablespoons lemon juice 2 tablespoons chopped fresh dill 1 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon black pepper 2 tablespoons butter or oil for cooking

Ingredients

In a large bowl, combine the cottage cheese, eggs, flour, lemon juice, dill, baking powder, salt and pepper. Mix until well combined. The batter should be thick.

Instructions

In a large skillet over medium heat, melt a small amount of butter or heat a drizzle of oil.

Scoop batter by the heaping tablespoonful into the pan. Slightly flatten with the back of the spoon.

Cook for 2-3 minutes per side until golden brown.

Serve pancakes warm, topped with additional fresh dill, a dollop of Greek yogurt or sour cream, smoked salmon and capers or lemon wedges.
